Another ‘diabetes beater’ recipe, enjoy these diabetes-friendly pancakes! If you are diabetic, this recipe is a healthy choice and better for you. These pancakes have no added sugar only good natural sugars1 and Xylitol2. Hopefully, you will try this healthy recipe. I tested this recipe at least 5 times to arrive at this combination of items. It is so exciting to add another breakfast or ‘anytime’ recipe to aid those who need to avoid glucose spiking sugar.

Pancakes for all

This recipe is good for all. Non-diabetics can replace the Xylitol with cane sugar3, brown sugar, or your favorite sweetener.

Whole Wheat Pancakes

Ingredients
  • 1 cup 100% whole wheat flour
  • 1 teaspoon ground cinnamon
  • 2 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • 2 tablespoons ground flax seed
  • 1 tablespoon Xylitol
  • 1 large Egg
  • 1 teaspoon vanilla extract
  • 2 tablespoon extra virgin olive or coconut oil
  • 1 cup unsweetened vanilla almond milk
  • 1 tablespoon 100% lemon juice
  • 1 tablespoon V8 V-FUSION® Pomegranate Blueberry Juice (no sugar added)

Preparation

Suggestion: Place all ingredients in one area before starting the preparations to make sure you do not leave anything out of the recipe.

  • Place all dry ingredients into a large bowl and whisk to combine them.
  • Add liquids and egg, use a mixer, whisk, or hand-blender to blend them to a smooth (runny) mixture.
  • Heat a lightly oiled pan. I recommend 1 notch below medium for cooking temperature. My electric stove goes to 10, I set the burner to 4.

Cooking

  • Pour approximately ½ cup of batter for each pancake onto hot pan or griddle.
  • Cook for 2 ½-4 minutes on each side or until they are golden brown.

Cooking time: up to 24 minutes
Total time: up to 44 minutes
Servings: 5-6 pancakes

  1. Good-sugar/natural sugars – in this recipe all of the sugar comes from fruit (complex carbs that absorb slowly, so no worry about spikes in glucose levels).
  2. Sugar levels from Xlear Xylosweet Xylitol (a non-GMO product) are from sugar alcohol and do not calculate as sugars in the nutritional info below.
  3. Replace Xylitol with Stevia – if you use Stevia leaf powder replace the amount of Xylitol with 2 teaspoons of Stevia (per stevia.com).
